Hi, I’m Daniel Walker.
Growing up in the south, I remember sauerkraut as that goopy stuff everyone knew about, but nobody wanted to eat. Myself included. But, when I discovered authentic sauerkraut — fermented, not pasteurized — I knew there were a lot of naysayers who would fall in love with the crunchy texture and delicious flavor.
Since I started Blue Ridge Brinery in 2014, my goal has been to produce high quality fermented foods using the best available ingredients. These products are for chefs, foodies and health enthusiasts alike. Because, not only is this food delicious, research indicates it is potentially vital to the gut. Fermented foods are rich in the nourishing probiotics, active enzymes, vitamins and minerals that keep us healthy.
I was introduced to gourmet krauts and kimchi in 2003, while working at a restaurant in California. I was blown away. This was sauerkraut? Who knew it could be so complex, with such layers of texture and flavor? Savory spices. Hearty vegetables. And better yet, it’s good for you. Since then, I’ve regularly had a stash of kraut or kimchi in my fridge at home.
When I started making sauerkraut 15 years ago, I wanted to use traditional fermentation methods. So, I bought a ceramic crock and began to experiment with different vegetables, herbs and spices. The best salt. The right temperature and fermentation period. Before long, my process became my passion.
In 2013 I began to work out the logistics of licensing and approvals to produce my own kraut and kimchi commercially. By 2014, I was ready. I sold my first jars at the Travelers Rest Farmers Market that summer.
Creating this delicious product in the foothills of South Carolina just makes sense to me. I know the region well. The culture. The food. I love to drive the backroads to the farms at the base of the mountains. To me, this is where the Blue Ridge starts.
Today, sourcing locally-grown organic and pesticide-free vegetables is a top priority. We believe our commitment to sustainable farmers is reflected in the superior taste of our products.
